Oven Fried Chicken !!!!

Things you will need:
    • 2 chickens (3 pounds each), cut in 8 serving pieces
    • 1 quart buttermilk
    • 2 cups all-purpose flour
    • 1 tablespoon kosher salt
    • 1 tablespoon freshly ground black pepper
    • Vegetable oil or vegetable shortening
Place the chicken pieces in a large bowl and pour the buttermilk over them. Cover with plastic wrap and refrigerate overnight.
  1. Preheat the oven to 350 degrees F.
    Combine the flour, salt, and pepper in a large bowl. Take the chicken out of the buttermilk and coat each piece thoroughly with the flour mixture. Pour the oil into a large heavy-bottomed stockpot to a depth of 1-inch and heat to 360 degrees F on a thermometer.
    Working in batches, carefully place several pieces of chicken in the oil and fry for about 3 minutes on each side until the coating is a light golden brown (it will continue to brown in the oven). Don't crowd the pieces. Remove the chicken from the oil and place each piece on a metal baking rack set on a sheet pan. Allow the oil to return to 360 degrees F before frying the next batch. When all the chicken is fried, bake for 30 to 40 minutes, until the chicken is no longer pink inside. Serve hot.

Homemade Spaghetti (Meat Sauce)

Things you will need:
  • 3- 6oz.can tomato paste
  • 4-14.5oz. can diced tomatos
  • 3-14.5oz.(italian style,oregano,basil,garlic diced tomatoes)
  • Fresh Basil
  • Oregano
  • Onion
  • 1-Large Bell Pepper
  • 1-6oz.can of Mushroom(sliced)
  • Garlic Salt
  • Pepper
  • 2pkgs.of Italian Sausage(take casing off)
  • 2-3lbs.of Hamburger meat
  • Fresh Spinach(bagged)
  • Italian Seasoning
  • Fresh Parsley
  • Sugar
  • Ketchup(optional)
In a large skillet mix hamburger meat and Italian sausage together,cook until brown and drain and set aside.
In a Very large pot,you will need to add ALL the diced tomatoes to the pot and let simmer.
Finely dice Medium onion and then add to the diced tomatoes.
Add 2Tbs. each of each seasoning listed above to the pot of diced tomatoes and onion and let simmer for 45minutes to allow the flavors to marinate with one another.
Chop the fresh basil and Fresh Parsley and set aside.
Coarsly chop your bell pepper and mushrooms, then add those ingredients as well to the pot.Allow to cook for another 20minutes.
Add the tomatoe PASTE to your sauce,
Add your meat from earlier to the pot of sauce and continue to cook on medium-low for the next 20 minutes.
At the last minute of the cook time, you will then need to add your sugar and the herbs that were chopped earlier and set aside.Next you will need to roughly chop the fresh spinach then you will add that as well to the mixture of ingredients.Let cook for 5minutes and remove pot from the eye. Serve with your favorite pasta..ganish your dish with parsley or unchopped spinach.....ENJOY!!!!
